Vegan - Gluten Free
Serves 4, time: 30 min
You will need:
1 yellow onion
2 cloves of garlic
1 bell pepper
3 dl cooked chickpeas
2 tbsp oil
2 tbsp tomato paste
1 tbsp curry
7 dl water
1 vegetable broth cube
1 tbsp white wine vinegar
salt
Peel and chop onion and garlic. Peel and dice sweet potatoes. Shred bell pepper. Rinse chickpeas in cold water. Heat oil in a large casserole and fry onion, garlic, tomato paste and curry until the onion is soft, 3-4 min. Add sweet potatoes, bell pepper, chickpeas, water, broth cube and vinegar. Cook 15 min, steering occasionally. Add salt. Serve with bulgur, couscous or rice. You can add a bit of yogurt or creme fraiche on top, as well as some mango chutney, roasted nuts or fresh herbs.
