To make your own soup for 4 people (with seconds for everyone), you need:
-1/2 to 2/3 of a medium-sized pumpkin
-2 large potatoes
-1 onion
-2 garlic cloves
-Salt
-Pepper
-Parsley
-Some vegan cream (here from oats)
1. Carve your pumpkin (keep what's left from your pumpkin to make more soup later, it adds greatly to any soup) and cut cubes of pumpkin.
2. Peal your potatoes and cut them into cubes as well.
3. Cut your onion and garlic and put them in the wok/big pan with oil.
4. Cook until the onion start to turn transparent.
5. Add your pumpkin and potatoes and put some water (add more or less depending on how liquid you like it. I personally don't like too liquid so the top layer of veggies should not be completely under water).
6. Add the salt, pepper, and parsley and bring to a boil. Once it boils, reduce the heat and keep cooking for around 25-30min.
7. Make sure the veggies are soft, switch of the stove, and mix the soup using your soup mixer.
8. Serve in bowls and add the cream.
