500 g Carrots
2 cm Ginger
2 dl Cream (Oatly's iMat works fine)
1 Lemon
0.5 Onion
3 tbsp Olive oil
8 cl Water
1.5 Vegetable broth cubes
2 tbsp Lemon juice
Topping: thyme, croutons, Oatly's iMat Fraiche
Peel and slice the ginger. Heat up the sliced ginger, lemon zest from 1 lemon and the cream in a small pot until it starts to boil, then put aside. Peel and cut the carrots in pieces. Finely chop the onion and fry it in a large pot with some of the oil for 2 min. Put in the chopped carrots and the rest of the oil and fry for some more minutes. Pour in the water and broth cubes and let boil until the carrots are soft. Take the pot away from the heat and mix the soup with a stick blender. When the soup is smooth, filter the cream into the soup and add the lemon juice. Add the topping and enjoy!
