Ingredients:
- 1 onion
- 1 clove of garlic
- 1 tablespoon canola oil
- 1 package of fresh lasagna noodles (200g)
- 3 tablespoons tomato paste
- 500g tomato sauce
- 1 teaspoon honey
- 1 cube vegetable stock
- 2 tablespoons of diced thyme
- 4 dl water
- 200g (frozen) leaf spinach
- 200g halloumi
- 1 1/2 dl pumpkin seeds (roasted)
- 1 1/2 dl grated cheese
- salt and pepper
- fresh thyme for garnishing
Instructions:
1. Preheat the oven to 225°C.
2. Mince the onion and garlic. In a medium pot over medium heat, roast the onion and garlic in oil for ca. 3 minutes.
3. Add the tomato paste and sauce, honey, cube vegetable stock, diced thyme and water and cook for ca 5 minutes. Add the spinach and cook for another 5 minutes.
4. Cut the halloumi in thin slices.
5. In a 20x30 cm dish start layering tomato sauce, lasagna noodles, roasted pumpkin seeds and halloumi. Stop with a layer of tomato sauce and sprinkle the grated cheese over it.
6. Put the dish in the oven for about 20 minutes. Garnish with fresh thyme.
