VEGAN
INGREDIENTS 3 very spotty/ripe bananas 1 1/2 cups oat flour (160 g) 4 tbsp cocoa powder (30 g) 2 tbsp liquid coconut milk (28 g)
3 tbsp oat milk 1 tbsp chia seeds + 3 tbsp water 1 tsp baking powder coconut chips
2 tbsp sugar
HOW TO PREPARE IT
Grind the chia seeds in a coffee grinder or in your food processor. Mix them with the water and set aside for 5-10 minutes. Put the flour and baking soda + baking powder in a big bowl and stir until there are no clumps. Blend the bananas in your food processor or mash them with a fork. Add the bananas, the chia seeds and 2 tbsp of sugar to the flour and mix well with a hand mixer. Split the batter in two bowls. Add cocoa powder, 2 tbsp of liquid coconut milk and 3 tbsp of oat milk to one of the bowls, mix well with a whisk. Add coconut chips on the top to get it crunchy. Bake in the oven at 200 degrees Celsius for about 40 minutes or until a toothpick comes out almost clean. Serve with plant yogurt or vegan ice cream. Enjoy!
