Here is a very tasty soup i learned to cook from my cousin Johan, who learned it from Hillevi, who might learned it from someone else...
big piece ginger
3-4 garlic cloves
2 large onions
2 packages a 400g crushed tomatoes
1 cube stock
HOW TO PREPARE IT
Tear ginger and slice garlic and brown in a hot pot with oil. Chop the onions and add together with turmeric. Let the onions become soft. Add the crushed tomatoes, one cube of stock and white pepper. Let it boil small. Then add the cocunut milk and heat, but do not boil. After about 5 minutes, mix the soup with a stick blender and add fresh coriander.
Serve with slices of advocado, cubes of apples and a tasty bread.
